Place 4 masa balls, 3 inches apart, between 2 sheets of plastic wrap. Use bottom of dry measuring cup to flatten each to 2-1/2-inch round. Repeat with remaining dough.
Sopes can be cooked ahead of time. Cool, then place in airtight container. Freeze up to 1 month. Thaw overnight in refrigerator. Reheat before using as directed.
Substitute 1/2 lb. (1 cup) fresh masa for the prepared dough.
