  • Heat oven to 375ºF.
  • Unroll pie crust on lightly floured surface; roll to 12-inch round. Cut into 12 rounds with 3-inch cookie cutter, re-rolling scraps as necessary. Place 12-cup muffin pan upside-down on work surface. Press 1 pastry round onto bottom and down side of each muffin pan cup.
  • Bake 9 to 11 min. or until golden brown; cool completely. Carefully remove pastry cups from pan.
  • Beat pudding mix and apple cider in medium bowl with whisk 2 min. Add 1 cup apple pie filling, 1 cup COOL WHIP and lemon juice; mix well. Spoon into pastry cups; top with remaining apple pie filling and COOL WHIP. Sprinkle with cinnamon.
