Mini JELL-O Trifle Bites

What You Need

cups boiling water

pkg. (0.3 oz. each) JELL-O Raspberry Flavor Sugar Free Gelatin

slices prepared fat-free pound cake (3/4 inch thick), cut into 24 cubes

pkg. (8 oz. ) PHILADELPHIA Neufchatel Cheese, softened

cup powdered sugar

cup thawed COOL WHIP LITE Whipped Topping

tsp. lemon zest

Make It

ADD boiling water to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Place 1 cake cube in each of 24 mini muffin cups lined with foil liners; cover with gelatin. Refrigerate 2 hours or until firm.

BEAT Neufchatel in small bowl with mixer until creamy. Gradually beat in sugar. Gently stir in COOL WHIP and zest.

SPOON into pastry bag fitted with star tip. Use to pipe Neufchatel mixture over trifles.

I changed this up a little since just making for my husband and myself. I made it in a 13x9 dish as a "cake". Made my own pound cake from the box so as to control the calories. Sliced up half the pound cake to fill the bottom of the 13x9 dish. Used 4 small boxes of raspeberry jello poured in the dish. Not soggy at all. Was set perfectly in two hours. For the topping, I used 2 cups cool whip and 8oz fat free cream cheese (left out the powder sugar to lower calories). This was a wonderful dessert dish. Cut into 16 squares and it was perfect!!!

This was OK, the kids enjoyed it. I was a little to bland for me. The was really wet. If you like Jello alot you'll like this.

my granddaughters loved this recipe. i did have trouble finding foil liners, but the jello bites are great. this will be a favorite with my grandkids. i will make this over and over.

This was really cute for a party dessert. They are easy to grab and not too messy. Very yummy and popular.

These dissappeared SO fast! Everyone grabbed these off of my cookie platter first! I am definitely making these one of my yearly cookies! And they are so easy to make! A must-have for any of my Christmas or New Years parties!!

I made these trifle bites for a Christmas party. By the end of the night, only a few were taken. The rest just sat there. The photo looks better than the actual item. The paper liners stuck to the jello and you couldnt eat them without making a mess. They tasted ok, but werent worth all the work involved.
