  • Place foil liners in 24 mini muffin cups. Add boiling water to gelatin mixes in large bowl; stir 2 min. until completely dissolved. Place 1 cake cube in each muffin cup; pour gelatin over cake to fill cup completely. Refrigerate 2 hours or until set.
  • Beat cream cheese in medium bowl with mixer until creamy. Gradually add sugar, beating until blended after each addition. Gently stir in COOL WHIP and lemon zest until blended.
  • Fill pastry bag fitted with star tip with cream cheese mixture. Pipe decorative dollop of cream cheese mixture on top of each trifle.

Rated 1 out of 5 by from I was not impressed with this recipe. I was not impressed with this recipe. Due to red food coloring allegeries I substituted lime jell-o for the raspberry and did not like the taste of the pound cake and lime together. I also found that the pound cake pieces were soggy. I did though think the topping was delicious and spread it between slices of the remaining pound cake for mini sandwiches. I will keep the topping recipe but will not ever make the jell-o bites again.

This was pretty easy to make and had delicious ingredients however, it was not a hit at our dinner party the other night. There were 6 kids and not one of them liked it, and only 2 adults even had a 2nd piece. Unfortunately, the rest of the Jell-O bites ended up in the trash because no one really liked them. I guess I won't be making them again even though I was one of the ones who thought they were yummy.

Rated 3 out of 5 by from I used Diet jello. I used Diet jello. but otherwise followed the recipe and was only able to get 21 trifles BUT the topping mixture made twice as much as needed. They were very tasty, and may make them again with some adjustments in measuring out the ingredients for the topping.

Rated 5 out of 5 by from Great! Great!!!! Soaked cake in raspbery syrup before adding the jello. Also, used almond flavoring in cream cheese instead of whipped cream, and piped it onto top with tiny drizzle of raspberry all fruit for added flair. Everyone loved these mini bites.

I agree pudding probably be better. Better yet just have the cake and save the topping for something else. Back to the kitchen crew!! ;)

Rated 3 out of 5 by from Very appealing looking. Very appealing looking. The pound cakes got soggy and only added strange taste. I piped the cream cheese topping like the picture, and I had so much leftover. With 24 bites, I should have made just half amount of topping.

I guess Shambudette's never made a "poke cake" (cake poked with holes after it's baked and jello poured over it and frosted with whipped topping... My kids all love it. Try it. You might find you like it.

Rated 4 out of 5 by from What a cute way to serve jell-o! What a cute way to serve jell-o!! These turned out so cute. There is a problem with the quantity. I didn't have quite enough Jell-O for 24 trifles and there was a lot of topping left over.
