Mini Lemon Cream "Pies"

Whether your glass is half empty or half full, when it's got lemony cream filling in it, it hardly matters. With this treat all to yourself, it's easy to be optimistic.

What You Need

pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding

pkg. (3 oz.) JELL-O Lemon Flavor Gelatin

1-1/2

cups boiling water

NILLA Wafers

1/2

cup thawed COOL WHIP Whipped Topping

Make It

MIX pudding mix and gelatin mix in medium bowl. Add boiling water; stir 2 min. until mixes are completely dissolved. Refrigerate 15 min.

PLACE 1 wafer in bottom of each of 8 dessert dishes; cover with pudding mixture.

TOP with COOL WHIP.

Helpful hint: Mix the pudding and jello mixes together well while still dry to avoid clumping issues when adding water.

The first time I made this I used the cookie as the crust, but the flavor did not seemed to match with everything in there. Now I make it as a small puddings not a pie. I add 1 tbsp. lemon juice with the pudding and some lemon peel grated on top.

After reading reviews I changed a couple of things. I added 2 cups boiling water to the jello only to dissolve. Then added 1/4 fresh squeezed lemon to jello. Added pudding to jello whisked until disolved. Cooled 3 hours then spooned over cookie and topped with Cool Whip to serve. This was a creamy lemony dessert.

I agree with the other reviewers... Nilla Wafers floated to the top of the mixture and it definitely made fewer servings. Tastes okay, but not something I'd make again.

This recipe is definitely missing something; I barely had 4 servings, not 8 servings, and the mixture was very "sticky". Should we be adding some Cool Whip to the lemon mixture?

This recipe was easy to prepare. If you put the round part of the cookie face down it doesn't float to the top. I would say it makes 4 servings, not 8. The mixture is about 12 oz and that makes 4 3-ounce serving.

i don't know what happened but the mix was very sticky and just didn't get it.

Was yummy, but my nilla wafers all floated to the top, giving it a kind of unappealing look. Not that my kids noticed. Maybe I should hae let the mixture cool more, not sure...

I love everything lemon and this one was very good. Only thing I changed was to crumble the vanilla wafer in the bottom of the cup. Made it easier to eat.
