I am writing my comments to the few poeple who wrote saything this was a bland and unfilling recipe. If you read, this recipe is for kids "Lunch Boxes" KIDS, not adults. I loved this idea. I used to make my son a whole sandwich and usually half of it ended in the trash. With only a half sandwich he gets all he needs. Sometimes to make it fun I will use a cookie cutter in the center of the sandwich and make an imprint of something cool. He likes that. Thanks for the great idea!

I was under the impression that this WAS a recipe for kids, so I thought it was a really good idea. My 7 yr old son doesn't always finish a whole sandwich w/ all the other yummy veggies/fruits sides & drink...plus they still have snack recess not long before lunch. This works great for us!
