  • Heat oven to 350ºF.
  • Place pie crusts on baking sheet. Mix Neufchatel, 1 Tbsp. sugar and 1 egg until blended; spoon into pie crusts.
  • Mix pumpkin, spice, remaining sugar and egg until blended; spoon over Neufchatel layers in pie crusts. Sprinkle with nuts.
  • Bake 40 min. or until centers are set. Cool completely. Serve topped with COOL WHIP.

    I made these for an event at work. I doubled the recipe and used 8 oz of reduced fat cream cheese, 2 tablespoons of sugar and 2 eggs for the cheese mixture and it seemed runny. I followed the rest of the recipe and because the cheese mixture was so runny, when I put the pumpkin mixture on top of it, it didn't layer, it sort of sunk in. They didn't look anything like the picture, but they did taste really good. Has anyone else had this problem?

    @wilcoxlm: Not sure where you are located but Lowes Foods in NC sells them. I had a time finding them until another shopper told me. I plan on taking these on a family outing next weekend.

    Where would I find those mini aluminum pie pans? They used to sell them at my grocery store, but I have note been able to find them for years!
