  • Heat oven to 350ºF.
  • Place pie crusts on baking sheet. Mix Neufchatel, 1 Tbsp. sugar and 1 egg until blended; spoon into pie crusts.
  • Mix pumpkin, spice, remaining sugar and egg until blended; spoon over Neufchatel layers in pie crusts. Sprinkle with nuts.
  • Bake 40 min. or until centers are set. Cool completely. Serve topped with COOL WHIP.

I doubled the recipe and used 8 oz of reduced fat cream cheese, 2 tablespoons of sugar and 2 eggs for the cheese mixture and it seemed runny. I followed the rest of the recipe and because the cheese mixture was so runny, when I put the pumpkin mixture on top of it, it didn't layer, it sort of sunk in. They didn't look anything like the picture, but they did taste really good. Has anyone else had this problem?

I did substitute fat free cream cheese, eggbeaters, Equal for the sugar, and 1 tsp of a fine chopped nut topping to make this very eatable after a big holiday meal- especially for dieters
