HEAT oven to 350ºF.
MIX turkey, garlic and Dijon in medium bowl. Shape into 20 small patties, roughly the size of a RITZ Cracker.
HEAT oil in large nonstick skillet on medium heat. Cook the patties, in batches, 2 to 3 min. on each side or until done (165ºF).
SPREAD each of 20 crackers with 1/2 tsp. mayonnaise; top with cooked patties and cheese. Place on baking sheet and bake for 3 to 5 min. or until cheese is melted. Dollop with remaining mayonnaise; sprinkle with green onions. Top with remaining crackers to form sandwiches.
