  • Beat Neufchatel with mixer until creamy. Blend in dry pudding mix. Gradually beat in milk. Stir in COOL WHIP.
  • Place 1 wafer on bottom of each of 24 (2-inch) paper baking cups; place in muffin pan. Cover with pudding mixture.
  • Freeze 1 hour. Top with berries just before serving.

How to Soften Neufchatel Cheese

Place completely unwrapped package of Neufchatel in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened. Add 15 sec. for each additional package of Neufchatel.

    The mini cheesecakes were a yummy, light desert. I used strawberry instant jello powder because I couldn't find pudding. Might use 2 packets next time for even more strawberry flavor!

    I was very frustrated with this recipe. I couldn't find the strawberry creme pudding anywhere, so I used vanilla pudding and mashed up strawberries into the mixture. However after frozen, they tasted really weird. Even after thawing out a little, they still did not taste like cheesecake. Maybe it should be called something different, so that you don't anticipate cheesecake and get something totally different.

    This is nice to make for a simple dessert and also a great snack because they are bite size and easy to eat.
