Rated 5 out of 5 by from So delicious & [pretty] healthy This was a great cleaning-out-the-fridge recipe! I found it when looking for way to use up turkey bacon. I used egg substitute and extra spinach, so I thought these were fairly good for us, plus some mushrooms I had cut up from another meal and little bits of remaining packages of different shredded cheeses. Super easy to make (just remembered I added a little more "egg" once they were in the muffin tin because some were "all stuff" and didn't look egg-y enough - came out prefect) and everyone loved them. Will definitely make again.

Rated 4 out of 5 by from Pretty Good I think these need more egg mixture/liquid. I used 2 whole eggs and 2/3 cup of egg whites (4 egg whites), and the cups were still not full. Once they cooled, they shrunk and were quite short. Taste is good.
