A cool cocktail translated into a refreshingly zesty dessert. This silken treat has mojito flavors but no alcohol, so it's really more mocktail than cocktail.

  • Line 9-inch round pan with large sheet of plastic wrap, with ends of wrap extending over side. Beat Neufchatel and 1/4 cup sugar with mixer until blended. Add dry gelatin mix, lime zest and juice; mix well.
  • Whisk in COOL WHIP and mint; pour into prepared pan. Combine pretzel crumbs, butter and remaining sugar; sprinkle over dessert. Use ends of plastic wrap to gently press crumb mixture into top of dessert.
  • Freeze 3 hours or until firm. Invert dessert onto plate; remove pan and plastic wrap. Let dessert stand at room temperature 15 min. to soften slightly before cutting to serve.

Special Extra

Stir 1/2 tsp. rum extract into COOL WHIP mixture before pouring into prepared pan as directed.

Note

If you can't get enough juice from the limes, add enough bottled lime juice to get the desired measure of juice needed to prepare the recipe.

Rated 4 out of 5 by from This was a big hit when I made it for guests. This was a big hit when I made it for guests. Everyone was amazed at the presentation, and thought it was very tasty. Next time, however, I will omit the fresh mint. When I got a bite of it, it was very strange when combined with the lime. Instead, I might add a touch of mint extract. I will definitely make this again!

In addition, I used sugar-free lime jello and key lime juice. First time, I made it for my husband who absolutely loved it. Second time, this dessert was served to guests who begged for the recipe.

I liked the taste and consistancy of the filling and liked the pretzal crust, just not together. The pretzal crust broke apart, so it did not look as pretty as I would have liked as I was making it for a group of people. I think I'd use a grahm cracker crust next time.

I used crushed gingersnap cookies in place of pretzels.Also good drizzled with chocolate sauce. Hint:chop the fresh mint really fine. Thank you Kraft kitchen chefs.

This was easy to make, I had all ingredients except the lime zest, and it still tasted good. I took it to work and it got rave reviews from all the coworkers. I thought it was very light and flavorful, very good for a warm summer day.

Rated 4 out of 5 by from We liked this! We liked this! I was in a hurry so I used a purchased graham cracker crust instead of the pretzel crust. I used sugar-free jello and I omitted the 1/4 c. of sugar. The pie was tart, but still plenty sweet. I will make this again.

Rated 5 out of 5 by from Our new favorite dessert - I've made it 3 times since Easter. Our new favorite dessert - I've made it 3 times since Easter. Replaced some of the pretzels with crushed walnut pieces and used unsweetened pineapple juice in place of the lime juice. Absolutely yummy!!

Rated 4 out of 5 by from Make this right away! Make this right away! It's that good! Do not skip the fresh mint mixed in, it's great. I made it with a graham cracker crust in a bundt pan the first time. Will try the pretzel crust next time.
