This recipe is fantastic! It is a great alternative to other more commonplace desserts - I used tilted 5-inch pans so I left them in the pans and they didn't look exactly like the picture, but they still tasted delicious. I made New York, Mocha, Smores, and Peanut butter - for the peanut butter and smores, I topped them with melted chocolate chips and all 4 were so so good! Definitely will make again, especially for group events as even though they are small, they are rich and feed a lot of people!
These are probably the best looking cheesecakes I have ever made; did 2 original, one peanut butter and one chocolate chip. I followed the recipe exactly, except I did put a pan of water in the bottom of the oven to avoid cracks. The instructions could be a little clearer about when to run the knife around the edge, and how long to let cool before removing the sides of the pan - I had to refer to another cookbook for that. Otherwise ... GREAT recipe, perfect for entertaining or gift giving, and I am so glad I finally got to use my mini springform pans.
