WASH greens, removing all grit. Remove hard stems. Place greens together in small bunches; roll up. Cut crosswise into wide strips.
COOK and stir onion and garlic in shortening in large skillet until tender.
ADD greens, 2 cups water, sausage, sugar, salt and red pepper to skillet. Simmer on low heat 45 minutes to 1 hour or until greens are soft and tender, stirring occasionally.
