  • Bring water, butter and 1/4 cup sugar to boil in medium saucepan on medium-high heat. Add flour, cocoa powder and 1 Tbsp. (3 tsp.) coffee; cook and stir on low heat 1 min. or until mixture pulls away from side of pan. Remove from heat. Add eggs; beat until blended. Stir in vanilla; spoon into pastry bag fitted with large tip.
  • Heat oil in deep fryer to 350ºF. Pipe dough, in batches, into 4-inch strips in hot oil; cook 4 to 6 min. or until each churro is golden brown on both sides, turning after 1 min. Remove from oil with slotted spoon; drain on paper towels. Sprinkle warm churros with remaining sugar.
  • Microwave semi-sweet chocolate, COOL WHIP and remaining coffee in microwaveable bowl on HIGH 2 min. or until chocolate is completely melted and mixture is well blended, stirring after each minute. Stir in zest. Serve with warm churros.

It is important to remove the saucepan from the heat before quickly stirring in the eggs so the eggs won't cook in the dough. Also to get perfect-looking churros, drag the dough while piping it into the hot oil. Then, use a small metal spatula to cut off the end of each churro.


If you don't have a pastry bag, you can use a large resealable plastic bag instead. Fill bag with churro batter, then cut off one bottom corner of bag before using to squeeze dough into hot oil.
