  • Heat oven to 375ºF.
  • Whisk egg and 1 Tbsp. (3 tsp.) coffee in large bowl until coffee is dissolved. Add dry cake mix and 1 cup COOL WHIP; beat with mixer until blended. (Dough will be stiff.)
  • Shape into 32 balls, using about 2 tsp. dough for each ball.
  • Place, 2 inches apart, on baking sheets sprayed with cooking spray.
  • Bake 8 min. or just until edges of cookies are set. (Do not overbake.) Cool on baking sheet 2 min. Remove to wire racks; cool completely.
  • Melt chocolate as directed on package. Add remaining coffee; stir until dissolved. Gently stir in remaining COOL WHIP until blended. Spread over cookies.

Special Equipment Needed


Cover baking sheets with parchment instead of spraying them with cooking spray before using to bake cookies as directed.
