  • Pour milk into medium bowl. Add coffee granules. Beat with whisk 2 min. Add dry pudding mix and cinnamon; beat 2 min. Stir in 1-1/2 cups COOL WHIP.
  • Pour into individual dessert dishes.
  • Refrigerate 1 hour. Top with remaining COOL WHIP just before serving.

Special Extra

For stronger coffee flavor, increase instant coffee to 2 Tbsp.

Substitute

Serve in 1-qt. bowl instead of the individual dessert dishes.

Rated 5 out of 5 by from I'm diabetic and can't eat a whole lot of sugar. I'm diabetic and can't eat a whole lot of sugar. I made this recipe w/ sugar free chocolate fudge pudding. Instead of Cool Whip I used fresh whipped cream sweetened w/ Splenda and folded that into the pudding. This is one of my favorite desserts, it's so indulgent tasting- I just love it.

I think next time I'll whip some whipping cream instead of cool whip just to make it slightly less sweet,and to make it really fluffy. I would recommend this recipe for a nice summer evening.

I used sugar-free vanilla pudding as to not overdo the chocolate, and added another tbsp of coffee. It was an amazing dessert for less than 200 calories!

The coffee flavor was not as strong but everybody loved it! Will try again for sure and try it with stronger coffee.
