  • Cook chiles in large skillet on medium heat 4 min. or until lightly toasted, stirring occasionally. Place in medium bowl. Add boiling water; cover. Let stand 15 min. or until peppers are softened. Meanwhile, cook sesame seed and seasonings in same skillet 1 min. or until lightly toasted, stirring frequently.
  • Drain chiles; reserving 1/2 cup of the soaking liquid. Place chiles in blender with sesame seed mixture and next 8 ingredients. Blend until smooth. Strain puree; discard strained pulp.
  • Heat oil in large skillet. Add strained sauce; cook on medium heat 5 min., stirring occasionally. Add chocolate; cook 1 min. or until chocolate is melted, stirring frequently. If needed, stir in reserved chile soaking liquid, 2 Tbsp. at a time, until desired consistency is reached.

How to Sweeten a Bitter Pepper Sauce

If sauce is too bitter for your taste, add 1 Tbsp. sugar, a little at a time, just until bitterness is gone.
