  • Preheat oven to 350°F. Microwave semi-sweet chocolate and butter in large microwaveable bowl on HIGH 2 min. or until butter is melted, stirring after 30 sec. Stir until chocolate is completely melted. Blend in milk and vanilla. Add flour and walnuts; mix well. (Dough will be stiff.)
  • Shape 1 level tablespoonful of dough around each caramel half, enclosing caramel completely. Roll in sugar. Place, 1 inch apart, on ungreased baking sheets.
  • Bake 6 to 8 min. or cookies are until soft and shiny. Let stand 5 min. on baking sheet. Transfer to wire racks. Cool completely. (Cookies will firm up as they cool.)

How to Warm Cooled Cookies

To warm cookies and soften caramel centers after cooling, microwave each cookie on HIGH 10 sec. or just until warmed.

Marshmallow Centers

Prepare as directed, substituting 48 JET-PUFFED Miniature Marshmallows for the halved caramels.

White Chocolate Centers

Substitute 1-1/2 pkg. (4 oz. each) BAKER'S Premium White Baking Chocolate (6 oz.) for the caramels. Cut each white chocolate square into two equal chunks to make 48 chunks total; set aside. Prepare dough as directed; shape 1 level tablespoon dough around each chocolate chunk. Place on baking sheets and bake as directed. Cool completely.

Rated 5 out of 5 by from This was a great treat! This was a great treat!!! These are great to make with my 2 year old. You don't need a mixer to make these. My daughter loves to help me stir:) I used white chocolate chips instead of the Baker's. She helped me count out the chips for the center of each cookie. I used 6 chips per cookie. They would be easier to roll without the nuts, but they are delicious with them. They are also good cold. I didn't bother to reheat them. Thank you for the recipe!!!!

Let me tell you that these cookies are so easy to make I don't know why I felt so intimidated to make them. All though when they do frim up later like it says the carmel does not ooze, but they are still so good. It is a good tasting cookie. Becareful when and if you want to heat them up in the micro to get that ooze effect it will get hot and burn you mouth. BECAREFUL! To me they were good either way next time I will try the marshmallow inside.

Rated 5 out of 5 by from These cookies are amazing. These cookies are amazing. I made them without the nuts because my brother doesn't like nuts, but they were still good without them. I like big cookies, so I didn't cut the caramels in half and instead made 2 1/2 dozen big cookies. I make several different types of cookies every year at Christmas for baskets for friends and these were by far the favorites.

It was very difficult to work with, bury the caramel, etc. and the dough dried out while I was working with it. While the cookies are yummy warm, when they cool the caramel is really tough to chew. I will not make these again nor recommend!!!!

She rolled each cookie in Splenda (we substituted) and enjoyed it so much. My family tried the cookies once they cooled off and they all loved them. I may try to do the chocolate in the middle next time. That would be good too.

Rated 5 out of 5 by from Everyone LOVED them! Everyone LOVED them! My son didn't care much for the nuts but ate around them. Taste like a turtle brownie. Made them for an office luncheon, they begged later that same day for me to make them the next time we had a function. I made a handful of them with the whole caramel.

Rated 5 out of 5 by from I really enjoyed this recipe! I really enjoyed this recipe! It was sooo good! It turned out better for me with candybar filling (Milkyway) than carmels. The carmels were too hard unless hot. I also tried it with junior mints and a few other candy centers. It was like my own box of chocolates.

I made this recipe for a cookie exchange at work, and my family couldn't stop eating them! They were a hit at work, and super easy to make. The cookies taste like mini carmel brownies! This is definately a recipe that I will make again, and again!
