  • Heat oven to 400°F.
  • Combine first 8 ingredients in large bowl.
  • Whisk egg, milk and oil in medium bowl until blended. Stir in bananas. Add remaining ingredients; mix well. Add to flour mixture; stir just until moistened.
  • Spoon into 12 paper-lined muffin cups.
  • Bake 20 to 25 min. or until toothpick inserted in centers comes out clean. Cool slightly.

Stir 1/3 cup raisins or dried cranberries into batter before spooning into prepared muffin cups and baking as directed.


Substitute 1 cup chopped apples for the mashed bananas.


Prepare as directed, substituting whole wheat flour for 1/2 cup of the all-purpose flour, and increasing both the baking powder and baking soda to 1 tsp. each.
