  • Heat oven to 375ºF.
  • Microwave potatoes in microwaveable bowl on HIGH 8 min.
  • Heat oil in large ovenproof nonstick skillet on medium heat. Add peppers and onions; stir. Cook 2 min., stirring frequently. Add potatoes, sausage and 2 Tbsp. ketchup; mix well. Cook 2 min., stirring frequently.
  • Use back of spoon to make 6 small wells in potato mixture. Slip 1 cracked egg into each well.
  • Bake 13 to 15 min. or until egg whites are firm and yolks are cooked to desired doneness, topping eggs with cheese for the last 3 min.
  • Drizzle with remaining ketchup.
