  • Cook pasta as directed on package; drain. Return to pan.
  • Add tomatoes, spinach, onions and oil; mix lightly. Cook 2 minutes or until spinach is wilted and mixture is thoroughly heated, stirring occasionally.
  • Add feta cheese; cook 1 minute. Stir.

Substitute

Substitute penne pasta for mostaccioli.

Rated 5 out of 5 by from One of our family favorites, for sure! One of our family favorites, for sure! I add a little freshly grilled (or poached/shredded) chicken for a bit of extra protein. This adds about 5-8 minutes to the prep time but worth the effort when I'm trying to make sure my little guy gets everything he needs for his busy work outs!

I use 4 Tbsp of olive oil instead of the 2 and do about a cup of green onions for a little more flavor. I also do a tomato basil feta cheese instead of the regular one, adds just enough flavor. Yum!

Rated 5 out of 5 by from I thought it was great! I thought it was great! I sauted some mushrooms and garlic before mixing everything else in. I also used spaghetti noodles and topped it with parmesan encrusted chicken. It was awesome and looked really fancy.

Rated 5 out of 5 by from Wow. Wow. Fantastic dish. Let me stress the importance of using fresh ingredients here...what a payoff. The only change I would make: use a little less cheese. Feta is zippy and can overpower the other flavors.
