Mostaccioli with Spinach and Feta recipe

This meatless pasta entrée takes advantage of ripe summer tomatoes. Spinach, olive oil, green onions and feta cheese add great color and zesty flavor.

oz.  mostaccioli, uncooked

cups  chopped tomatoes
4
cups  fresh spinach, stems removed, washed
1/2
cup  chopped green onions
2
Tbsp.  olive oil
1
pkg.  (8 oz.) ATHENOS Feta Cheese with Basil & Tomato, crumbled

Make It

COOK pasta as directed on package; drain. Return to pan.

ADD tomatoes, spinach, onions and oil; mix lightly. Cook 2 minutes or until spinach is wilted and mixture is thoroughly heated, stirring occasionally.

ADD feta cheese; cook 1 minute. Stir.
