  • Heat oven to 400ºF.
  • Make cut in one long side of each chicken breast, being careful to not cut through to opposite side. Fill each pocket with 2 basil leaves and 1 each cheese slice and sun-dried tomato.
  • Place chicken on one side of rimmed baking sheet sprayed with cooking spray; add tomatoes to other side of baking sheet. Brush chicken evenly with 1 Tbsp. dressing.
  • Bake 30 min. or until chicken is done (165ºF).
  • Cut remaining basil leaves into thin slices. Top tomatoes with basil and remaining dressing; toss lightly. Serve chicken topped with tomato mixture.

Serve with hot cooked rice.

I changed it up somewhat as I pounded the breast out and then split, added the ingredients, folded back over and then used 3 toothpicks to stitch the sides. Next I seasoned with garlic salt and pepper and dusted with plain flour and pan fried on a low-med heat in olive oil and butter till fully cooked. I drizzled the balsamic/olive oil on top after I flipped the breast over. I added the grape tomatoes towards the end and drizzled with the balsamic/olive oil also seasoned with garlic salt and pepper.

Rated 5 out of 5 by from I also used fresh mozzarella and omitted the sun-dried tomatoes (picky kids). I also used fresh mozzarella and omitted the sun-dried tomatoes (picky kids). I added prosciutto on the inside and used Italian dressing instead of the balsamic dressing on the outside of the chicken. The boys loved it! I was told to "keep this in the rotation" of our dinner menu!

Rated 5 out of 5 by from Delicious but a few suggestions. Delicious but a few suggestions. I used a hunk of Fresh Mozzarella and cut slices from this. Seasoned the inside of the chicken with what I like. Only cooked the chicken 25 minutes and I used 2 large chicken breasts. Would use even more cheese, more fresh basil inside and on the grape tomatoes.

Rated 4 out of 5 by from This recipe ended up tasting really good. This recipe ended up tasting really good. I couldn't find fresh basil leaves or sun died tomatoes at the store so I used dried basil leaves and extra grape tomatoes. It still turned out tasty. The mozzarella was delicious.
