  • Melt butter in large skillet on medium heat. Add mushrooms, onions and garlic; cook 20 min. or until vegetables are tender and all mushroom liquid is cooked off, stirring occasionally.
  • Remove 1/2 cup mushroom mixture; reserve for later use. Spoon remaining mushroom mixture into food processor container. Add barley, bread crumbs and soy sauce; process until smooth. Spoon into medium bowl. Add reserved mushroom mixture; mix well.
  • Spray 1/3-cup dry measuring cup with cooking spray; use to portion mushroom mixture into 6 mounds. Shape each into patty.
  • Cook 3 patties in large nonstick skillet sprayed with cooking spray on medium heat 3 min. on each side or until heated through. Top each mushroom burger with 2 cheese pieces; cover. Cook 2 min. or until cheese is melted. Remove from skillet; cover to keep warm. Repeat with remaining mushroom patties and cheese.
  • Spread toast slices with aioli, then mustard. Top with mushroom burgers and salad greens.
