  • Melt butter in 2-qt. saucepan. Add onions; cook and stir until crisp-tender.
  • Add broth, peas, mushrooms and almonds; stir. Bring to boil.
  • Stir in rice; cover. Remove from heat. Let stand 5 min. Fluff with fork before serving.

Substitute

Substitute 1 can (14-1/2 oz.) chicken broth for the beef broth.

    Just made this recipe tonight and loved it! I used fresh portabello mushrooms and a cup of brown rice. After adding the rice, I let it simmer 10 minutes until rice was cooked. I also added some salt, pepper and parsley. Will definitely make this again! It was quick, easy and delicious.

    I HAVE NOT TRIED THIS RECIPE YET - BUT I DO PLAN TO TRY IT DURING THE 4TH OF JULY - AS I AM HOSTING A BIRTHDAY PARTY FOR MY THREE (3) GRANDCHILDREN. IT REALLY SOUND LIKE IT WOULD BE VERY DELICIOUS.
