  • Heat oven to 400ºF.
  • Melt butter in medium saucepan on medium heat. Add mushrooms and onions; cook and stir 5 min. or until tender. Remove from heat. Stir in stuffing mix and cheese.
  • Insert fingers carefully between the meat and skin of each chicken quarter to make pocket; fill with stuffing mixture. Place, skin sides up, in large roasting pan.
  • Bake 50 to 55 min. or until chicken is done (165ºF), brushing with barbecue sauce for the last 10 min.
