  • Heat 1 Tbsp. oil in large skillet. Add potatoes in single layer in batches; cook 4 min on each side or until browned on both sides. Remove potatoes from skillet; cover to keep warm. Repeat with remaining oil and potatoes.
  • Return all potatoes to skillet; top with beans and cheese. Cover; cook 5 min. or until beans are heated through and cheese is melted.
  • Top with peppers and sour cream.

How to Cook the Potatoes

I shortcut the boiling the potatoes and slice off the potato like making chips, Fry in oil son both ides till just brown. Then top with Black Beans, drained and rinsed removing most of the paste. Cook a few minutes before adding cheese; also added cooked bacon or sliced sausage; turkey, also a half pound ground beef treated like taco meat. I tried cooking with Jalapenos but unless you Like It Hot like I do you might want save diced Jalapeno on the side to add to it. Sour Cream only if you don't like it like it is!!
