  • Arrange chips on large microwaveable plate; top with meat mixture and cheese.
  • Microwave on HIGH 2 to 3 min. or until cheese is melted, rotating plate after each minute. Top with remaining ingredients.

I like the salsa with the meat rather than a taco flavored spice mix, which sort of makes everything taste dry. Try a can of mexican tomatoes. It's basically salsa without the price tag. Buy a can for 50 cents! I agree with the comment on the corn, although I won't do it. It would have to be fresh, which is impossible! Although, on your vegi nachos, I really dig black beans, with refried beans, green onion, totatoes EVERYWHERE, avacado in big chunks (YUM!) and loads of cheese with some fresh chips.

Non-vegetarians will never know they ate boca-stuff! It really tastes real, and gives you peace of mind! For extra spice you might add thickly sliced garlic cloves sauteed in olive oil. Corn kernels might give some colour spots to it when added into.

I used 4 oz of velveta a handful of taco meat that was left over from the night before and about 1/4 cup of salsa and threw it all in a pan it turned out to be a great dip for chips and also a great toping on the nacho's with all of the other stuff.

My husband and I love nachos but I've never had nachos like this, it was very good, so full of flavor. I used a jar of guacamole with salsa already mixed in and it was delicious. I made the recipe as is but I did leave out the olives since I'm not a fan. Would definitely make this again.

However, I browned my beef and added taco seasoning, other than that we pretty much followed the recipe as written. We also used jarred queso cheese and shredded lettuce. Great, quick recipe enjoyed by all.

After searching the web for something different to make for a Friday night appetizer, I came across this recipe. WOW!! It was truly delicious. My husband is a real picky eater and he loved it. Before making I read reviews and took the advice of seasoning the beef with taco seasoning, good thing I did because it gave it lot's of flavor. Will definitely make again!

Even though my children no longer live at home, when I called and told them I was making the cheesy beef nachos for supper they decided to 'drop in'. Needless to say I had to make several batches. NO left overs!
