  • Spray small microwaveble bowl with cooking spray. Add egg, cream cheese spread and milk. Beat lightly with fork. Microwave on HIGH 1 min. or just until egg is set.
  • Spoon onto tortilla; top with tomatoes.
  • Fold in opposite sides of tortilla, then roll up starting at bottom. Serve warm.

Variation

Prepare as directed, spooning cooked egg mixture into a pita pocket or evenly onto 2 toasted English muffin halves. Top with tomatoes.

Serving Suggestion

Serve with fresh fruit and a glass of fat-free milk to round out the meal.

    i was excited to make this recipe because it seemed very easy, but tasty. It turned out very bland with hardly any taste. It was also messy.. would not make again

    I followed the advice of using 1 tbsp. milk and 1 tbsp. of cream cheese to 1 egg and it turned out perfect. Very good.
