  • Heat oven to 350ºF.
  • Place 1 cookie, flat side down, in each of 24 paper-lined mini muffin pan cups. Beat cream cheese, sugar and vanilla with mixer until blended. Add sour cream and flour; mix well. Add egg; beat on low speed just until blended. Spoon over cookies.
  • Bake 13 to 15 min. or until centers are almost set.
  • Cool 1 hour before removing from pan. Refrigerate 2 hours.
  • Top with pie filling just before serving.

We eat a sugar limited diet (very little real sugar and no artificial sweetener) which makes finding a dessert food difficult. This recipe called for 1/4 cup of sugar, which is reasonable. Instead of chocolate chip cookies, we crushed chocolate graham crackers and added a little melted butter to make the crust. We followed the instructions, except put it into regular muffin pans. We only needed to increase baking time to 16 minutes. Results: yummy bite of cheesecake that was easy and simple to make and tastes good. I will be making this again.
