  • Mix gingersnap crumbs and butter until well blended. Press firmly onto bottom and up side of 9-inch pie plate; set aside.
  • Stir boiling water into dry gelatin mix in large bowl at least 2 min. until completely dissolved. Add enough ice water to lemon juice to measure 1 cup. Add to gelatin along with the lemon zest; stir until slightly thickened. Remove any unmelted ice. Gently stir in whipped topping with wire whisk. Refrigerate 20 min. or until mixture mounds. Spoon into crust.
  • Refrigerate 4 hours or until set. Store leftover pie in refrigerator.

How to Crush Ginger Snaps

Use food processor to easily crush the gingersnaps.

Special Extra

Garnish with chopped candied ginger and additional lemon peel just before serving.
