No-Bake "Mimosa" Cheesecake

Named after the classic drink, our No-Bake "Mimosa" Cheesecake skips the champagne and keeps the bright citrus flavor with mandarin oranges and JELL-O.

What You Need

60
 NILLA Wafers, finely crushed (about 2 cups)

Tbsp.  margarine, melted
1
cup  sugar, divided
4
pkg.  (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
1
pkg.  (3 oz.) JELL-O Orange Flavor Gelatin
1
tub  (8 oz.) COOL WHIP LITE Whipped Topping, thawed
1
can  (15 oz.) mandarin oranges, drained

Make It

MIX wafer crumbs, margarine and 1/4 cup sugar; press onto bottom of 13x9-inch pan. Refrigerate until ready to use.

BEAT Neufchatel and remaining sugar in large bowl with mixer until blended. Add dry gelatin mix; mix well. Stir in COOL WHIP and oranges; spread over crust.

REFRIGERATE 4 hours or until firm.
