  • Preheat oven to 350°F. Melt butter in medium saucepan on medium heat; stir in flour. Cook 1 min. Gradually add milk, stirring until well blended. Cook and stir until mixture comes to boil. Remove from heat. Add cheese, stirring until melted. Stir in mustard and bacon. Cool slightly. Stir in egg yolks, 1 at a time.
  • Beat egg whites with electric mixer on medium speed until stiff but not dry, about 5 min. Gently fold into yolk mixture. Pour into 12 lightly greased nonstick muffin cups.
  • Bake 25 min. or until puffed and set.

Substitute

Prepare as directed, using KRAFT Mexican Style Shredded Cheese.

Make Ahead

Prepare Step 1 the day before serving. Cover and refrigerate. When ready to serve, continue with steps 2 and 3 as directed.

Rated 1 out of 5 by from This was a tremendous disappointment. This was a tremendous disappointment. I have exactly 11 sitting in my kitchen. I NEVER follow directions, I had not made a souffle before, so I followed the directions exactly. My sweet husband, who has never pushed anything away, tried it and his face fell. It tasted horrible. Bland, boring and very unflavorful. Why no spices in the recipie? Really awful. Really embarressed that I could not serve these impressive sounding bites at my dinner party tonight. What a waste. Everyone took a little piece of my husbands and concured. NOT GOOD.

I thought it was really good, but I agree with others that it probably would be better with more bacon than called for and maybe some onion for a little extra zip. My family is going to be going on a week long vacation with our horses. We will be camping and I wondered how it would do to make this recipe ahead and freeze. Then we could just pop in the microwave. Our camping is in a horse trailer with living quarters, no rustic camping for me.

The souffle's puffed beautifully, browned nicely, looked just like the picture however, I could not get even one of them out of the muffin pan. Please advise what I may have done wrong. I needed something quite, impressive and tasty . This was perfect. It was the first time I made it and I was rushings and the recipe was perfect. nothing went wrong breakfast was a hit. I served this along w/grits, turkey, ham, egg-onions and peppers, biscuits and a fruit bowl. The souffles made a big impack for soul food eater. Thanks. I love you guys, you make me look good.

I substituted the ham for bacon because it was all I had and used 2% cheese they tasted great. I probably wouldn't make them again though because they took so long to make. I also learned that I don't like the texture of a souffle very much - they are very airy and I had to eat several to feel like I'd eaten anything at all!

Rated 1 out of 5 by from i made these for a GNO party i held at my house. i made these for a GNO party i held at my house. i was not real pleased with them. first of all they took almost 50 minutes to bake and the magazine said they should take 25 minutes. second off all, they didnt taste all that great. i probably will not be making this recipe again. everything else i served at the party(all from various kraft magazines or the board here) were a big hit.

Rated 3 out of 5 by from Easy to prepare and I was pleased that I was able to work it in easily to my diabetic lifestyle. Easy to prepare and I was pleased that I was able to work it in easily to my diabetic lifestyle. There is a bit of an issue with the souffles not wanting to come out of the muffin pan so you may want to spray it with some non-stick cooking spray REALLY well. Most of mine came out, but a few stuck. I was able to coax the rest of them out undamaged though.

Rated 2 out of 5 by from I was disappointed in these as well. I was disappointed in these as well. I read the other reviews, so I decided to use 6 slices of bacon instead of 4. I also used medium cheddar as opposed to mild. I also added some dried minced onion to add flavor. They were still relatively bland. I brought them to a work meeting and only 4 of the 12 were eaten. I won't be making them again
