  • Heat oven to 350ºF.
  • Mix nut mix and pepper on plate. Beat egg white lightly in shallow dish.
  • Dip potato wedges, 1 at a time, in egg white, then press 1 side of each in nut mixture. Place, nut-sides up, in single layer on foil-covered baking sheet.
  • Bake 30 to 40 min. or until tender.

Substitute

Prepare using 1 large baking potato.

Substitute 2 Tbsp. sugar and 1/4 tsp. ground cinnamon for the black pepper.

Rated 2 out of 5 by from Very dry. Very dry. The nuts did not stick to the potatoes enough and ended up on the bottom of the pan. I cooked them for an additional 15 minutes because although the wedges were thin, they did not cook enough. I even sprayed them with butter spray to help with moisture, but it didn't work. Perhaps steaming them first to help with the cooking process, then baking, or maybe covering them with foil would help.

Rated 3 out of 5 by from I made a few adjustments. I made a few adjustments. I found for my daughter & I tht 1 large sweet potatoe was enough ( wedges). I first cut the potatoes, sprayed them with I Can't believe it's not butter, dipped in butter, use cinnamon sugar in the nut mixture, pressed firmly, put on the pan, more spray on the wedges, & sprinkled cinnamon sugar lightly over the top. Pretty good!

Rated 2 out of 5 by from It's a tasty recipe. It's a tasty recipe. I made it with brown sugar and cinnamon. The potatoes were too hard after the initial 40 minutes at 350 degrees. Possibly oven temp needs to be higher, or lower for a longer period of time. Drizzling with butter before serving was a good suggestion!

Rated 3 out of 5 by from I also had problems with the sweet potatoes being underdone. I also had problems with the sweet potatoes being underdone. Just increase the time by maybe even 10 minutes. Brown sugar was awesome suggestion. My husband doesn't like sweet potatoes and he loves this! Good for picky eaters!

Rated 5 out of 5 by from EXCELLENT! EXCELLENT!!! I actually used Blueberry Nut Crunch Cereal and Cashews. I put in the food processor along with some brown sugar and cinnamon. As I was about to take them out, I drizzled with butter. There were fantastic!!!!
