I forgot to tell you I do not cook the cashews.
Love, love, love. I make this often as a morning treat. I add more cranberries and nuts though to bulk it up. I also use part cinnamon and part ginger in the recipe. I think the amount of coating is just fine if you mix it well enough. I don't like too much sweet, this is just enough as is. I do bake it on a silicone baking mat which may help with the distribution of the coating.
It leaves a weird after taste. It might have been the pan that I used though. I think that I will try this again with a new pan.
