Oh-So-Easy Egg Salad & Canadian Bacon Sandwiches

How easy can egg salad sandwiches get? Well, these are made with eggs scrambled in the microwave. Layer with Canadian bacon and enjoy in just 10 minutes.

What You Need

Tbsp.  KRAFT Light Mayo Reduced Fat Mayonnaise
Tbsp.  CLAUSSEN Sweet Pickle Relish
Dash  of celery salt (optional)
slices  Canadian bacon
slices  whole wheat bread, toasted
slices  tomato

Make It

BEAT eggs lightly in small microwavable bowl; cover loosely with microwaveable plastic wrap. Microwave on HIGH 45 sec.; stir. Cover and return to microwave. Microwave an additional 30 sec.; stir. Let stand, covered, 1 min. or until eggs are set and no visible liquid remains. Stir in mayo, relish and celery salt.

HEAT Canadian bacon as directed on pkg.

PLACE 3 slices Canadian bacon on each of 2 of the toast slices; top each with half of the egg mixture and 1 tomato slice. Cover with remaining toast slices.

Special Extra
For added flavor and crunch, add your favorite sandwich fixings, such as lettuce and bell pepper rings to the sandwich.
Prepare as directed, substituting chopped CLAUSSEN Kosher Dill Pickles or chopped CLAUSSEN Hearty Garlic Pickle Slices for the pickle relish.
Make Ahead
To serve as a cold egg salad filling, prepare egg mixture in advance. Cover and refrigerate up to 3 hours. When ready to serve, use to prepare sandwiches as directed omitting the heating step of the Canadian bacon.
