  • Cover bottom of 13x9-inch pan with grahams.
  • Beat cream cheese in large bowl with mixer until creamy. Gradually add milk, mixing until well blended after each addition. Add dry pudding mix; beat 1 min. Gently stir in half the COOL WHIP; spread over grahams. Cover with remaining COOL WHIP and fruit.
  • Refrigerate several hours. Top with coconut just before serving.

How to Toast Coconut

Spread coconut evenly into thin layer on baking sheet. Bake at 350°F for 7 to 12 min. or until lightly browned, stirring occasionally.

I am in a high school Foods class, and my group made this for our final and was graded by a member of the staff that we selected. None of us really like coconut, but it added an amazing flavor and we couldn't eat it without it. Our entire class couldn't stop eating it, and soon the whole pan was gone. We got a 100% on our final, and the only thing that I would change were I to do it again is that I would make a real graham cracker crust instead of just using the crackers.

Rated 5 out of 5 by from This is the "Tasha" Pie. This is the "Tasha" Pie. All my family requests this for all parties in the spring and summer time. I shake it up tho. Instead of using graham crackers try using different pre-made pie crusts. They come in different sizes and flavors that may just make the next best hit! I also create beautiful designs with the fruit in round pie crusts. Remember to change things up if this becomes a major addition to your requests lists! :-) enojy

My parents are diabetic, so I made mine sugar-free and lower-fat by substituting neufchatel cheese, sugar-free/fat-free pudding mix, sugar-free Cool Whip, and 2% milk. It still has a cool, rich, delicious flavor!

EVEN AFTER 2 DAYS, STILL TOO SOFT TO CUT INTO NICE SQUARES. I THINK TOO MUCH COOL WHIP MADE THIS TOO SOFT. YUMMY, BUT SHOULD BE A LITTLE FIRMER AFTER SETTING. MAYBE THE ADDITION OF A LITTLE MORE CREAM CHZ WOULD HELP :o)

I however changed it a little and put crushded heath bars in the middle and shaved choc. on top. I happen to be a chocaholic! the fresh fruit one sounds divine for summer however. thank you for this easy and very tasty dessert

I don't have a copy handy but it was really good. I'm going to try this version but probably leave out the kiwis as we don't care for them much.

I used sugar free lemon pudding instead of vanilla and low fat cream cheese to slim it down a little. I'm making another version of this dessert for a party this weekend. Thanks for the great recipe!
