  • Beat eggs and mustard in small bowl with whisk until blended. Melt margarine in small nonstick skillet on medium heat.
  • Add egg mixture; cook 2 to 3 min. or until set, lifting edge with spatula and tilting skillet to allow uncooked portion to flow underneath. When set, fold omelet in half.

Special Extra

Fill omelet with hot sautéed vegetables such as chopped broccoli, carrots, green beans and/or chopped ham or shredded cheese.

Serving Suggestion

Serve with whole wheat or whole grain toast and 1 cup of your favorite fresh fruit, such as mixed berries or cantaloupe chunks.
