I make this very thing quite often. I also make mine in the microwave using a dish specially for making eggs in the microwave (using their directions). For additional healthy variety, try spreading mustard on the bun, adding/subbing tomatoes or salsa, using chopped/sliced pre-cooked turkey bacon, subbing with a whole wheat tortilla or even bread and so forth. You can create a large variety here.
