  • Heat oven to 400°F.
  • Line 13x9-inch pan with foil. Cut eggplant into 1-inch-thick slices; moisten with water. Add, 1 at a time, to coating mix in shaker bag; shake until evenly coated. Place in single layer in prepared pan. Discard bag and any remaining coating mix.
  • Add zucchini and onions to pan along with the eggplant; drizzle with dressing.
  • Bake 30 min. Top eggplant with pasta sauce and cheese; bake 5 min. or until cheese is melted.
