  • Brown meat with garlic in large skillet; drain. Return to skillet.
  • Add tomatoes with their liquid, broth and water; mix well. Bring to boil. Add pasta and zucchini; mix well. Cover; simmer on medium-low heat 15 min. or until pasta is tender.
  • Stir in tomato paste and Italian seasoning until blended; top with cheese.

Serving Suggestion

Serve this main dish with a mixed green salad for a quick and tasty weekday meal.

Substitute

Substitute 1 cup frozen sliced zucchini for the sliced fresh zucchini.

I added a small can of tomato sauce to make it redder ( I eat with my eyes first) and the paste gave the sauce a wonderful thickness. I also added black pepper to the ground meat, 3 cups of pasta (dry), basil, onion powder, and parsley. I didn't have zucchini (ate it last night) but still yummy without it. Made a salad instead and yummy garlic bread.

Easy to make though I did use 1 pound of farfalle, 1/2 tsp of Italian seasoning, 1 tsp dried Oregano, 1/2 tsp fresh ground pepper and omitted the Cheddar cheese, used Kraft grated Parmesan cheese instead. Husband and daughter loved it. Will definitely make this again though I am using Italian sausage instead of ground beef and adding Bell peppers, yellow squash and chopped sweet onion.

I read some comments that some thought it was a little bland so I doubled up on the italian seasoning as well as adding fresh ground pepper. I substituted a can of tomato sauce for the paste and also added about a 1/4 cup of parmesan cheese. My kids actually asked for a second helping. I'll definitely make this dish again!

Rated 5 out of 5 by from Loved it. Loved it. Used about 1/2 the amount of meat, 100% of the zucchini and 3/4 of everything else. I used goat cheese instead of cheddar. I like that I usually have all these ingredients on hand already and its a single dish with veggies included - makes it easy to prepare and quick to clean up afterwards. The dish is delicious and my family loves its too.

My entire house was filled with the aroma and my husband could not wait to eat!!! However, instead of regular diced tomatos I used the ones flavored with garlic, basil, and oregono and added a little more Italian seasoning than suggested. Also used low-fat cheddar cheese, can't wait to eat the leftovers!

I only changed it up by using only 1 lb of meat and using rigatoni instead of farfalle since that's what I had. Wow... this was great. My hubby and I both scarfed it down. It was so simple - how the heck did it taste so darned good?!

Rated 5 out of 5 by from Yummy! Yummy!!! I used one pound of ground beef and about 3/4 of the other listed ingredients. Made enough for 4 large portions. I also used Italian style diced tomatoes after reading other reviews. I used rotini because I had it at home. Can't wait to serve it again! Everyone in our family enjoyed it!

Rated 3 out of 5 by from I would say this recipe is delicious. I would say this recipe is delicious. Great for those that are looking for a one dish meal as it is filling to the stomach. Instead of cheddar cheese I substitute my favourite mozzarella, it taste better than cheddar chesse. Oh for those that doesn't consume beef they can substitute with chicken.
