I made this with veal chops and zucchini. This is an excellent recipe and a cinch to make. Loved it!

Then follow our 3 simple steps:

PREHEAT oven to 400°F. Place vegetables and potatoes in 13x9-inch baking dish. Drizzle with dressing.

COAT meat with coating mix; place over vegetable mixture.

BAKE 40 to 45 minutes or until the meat is cooked through. Top each piece of meat with 1/4 cup each sauce and cheese. Continue baking 5 minutes or until cheese is melted.

Very good well-rounded meal. I substituted frozen potatoes with four medium potatoes chopped seasoned with salt, pepper, tony's and oregano. I used Light Done Right Italian dressing and Fat free mozzarella. My estimate is that almost 200 calories are slashed per serving! Yummy and healthy.

I made the ckn breast version last night and the whole family (2 kids included) loved it and asked for more. I added a baked potato and fruit to round out the meal. I'm looking forward to making it or another version again.

I baked the recipe for 45 min. until the chicken was done. But the potatoes and carrots were not cooked, they were still raw. Had to cook the vegetables, after removing them from the pan, in the microwave for another 6 min. Once I had the meat and vegetables in the oven I thought that it wouldn't be long enough to cook the vegetables, and I was right. I would have rated this recipe very good, except the vegatables came out raw. Is there something I was missing in the steps or wasn't this recipe ever tried before it was listed.
