One-Pan Roasted Pork Supper

Sunday night meets weeknight with this smart dish of tender pork, stuffing and sweet potatoes, all ready in one pan and with only 15 minutes of prep.

What You Need

lb. sweet potatoes (about 3), peeled, cubed

large red onion, cut into thin wedges

1/2

cup KRAFT Lite CATALINA Dressing

1-1/2

tsp. dried thyme leaves, divided

pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

1-1/2

cups water

small pork tenderloins (1-1/2 lb.)

Make It

HEAT oven to 375°F.

TOSS vegetables with dressing and 1/2 tsp. thyme; spread onto bottom of 15x10x1-inch pan sprayed with cooking spray. Bake 10 min. Meanwhile, mix stuffing mix and water.

CUT each tenderloin diagonally into thirds. Spoon vegetable mixture to sides of pan. Spoon stuffing down center of pan; top with meat and remaining thyme.

BAKE 45 to 50 min. or until meat is done (160°F).

For Softer Sweet Potatoes

Roasted sweet potatoes have a firm texture. If you prefer a softer texture, microwave the cubed potatoes in microwaveable dish on HIGH 3 min. Toss with onions, dressing and thyme; spread onto bottom of 15x10x1-inch pan. Continue as directed.

Made this for dinner tonight & was very pleasantly surprised. This meal was absolutely delicious! My hubby raved about it. Followed the recipe exactly & wouldn't change a thing. I used a small pork loin roast sliced into 5 slices about 1 inch thick. The sweet potatoes and red onions tossed with the catalina dressing was amazing. We have enough left over for another meal. This recipe is a keeper. Will definately make again!

My family absolutely LOVES this dish & we have it quite often. I usually let it cook about 20" longer than instructed.

Good but the potatoes remain a little firm but other than that it was good.

double the stuffing mix and vegie mix....I guess that means we liked it. It is very much so a "do again"

This was terrible. Micro the potato's first and then bakes. Lacked flavor and as we say in our family "Not a do over".

This recipe was easy and very yummy! My husband loved it! I did make a few changes, though. Instead of tossing the vegetables in the dressing, I used olive oil. Also, instead of using water to mix up the stuffing, I used chicken stock. I thought both changes brought more flavor. Will make this again!

Excellent! I used a whole pork loin, 2 boxes of stuffing and 3 large sweet potatoes, and added a little rosemary, and baked for about 30 minutes extra. Everyone had 2nd helpings of everything, plus there's enough left over for lunch tomorrow, and a tad bit more!

My family LOVED it! The pork was fantastic! I would suggest using two boxes of stuffing mix for anymore than 3 people. We have 5 people in our family and one box just didn't cut it!
