I heeded the comments given by other users and guarded against it not having enough flavor by adding a jar of salsa to the dish while the rice was cooking. I also added some corn as mentioned by others. We added crushed tortilla chips on top with the lettuce, tomatoes, and sour cream! I have ALREADY been asked by my husband to prepare this again. He made a special request for me to double the receipe next time so that we can possibly freeze it for another quick meal at a later time! ;) ***FYI ~ I used ground turkey instead of beef.***

Rated 5 out of 5 by from I switched it up a bit, and now my husband asks me to make this ONCE a week. I switched it up a bit, and now my husband asks me to make this ONCE a week. I brown a pound of meat with pepper, onion salt, and some cajun seasoning. Then I strain out the grease & add about 2.5 cups water. I get two of the pre-seasoned packets of spanish rice (that cost about 50 cents in the store) add those in & 1.5 packets of taco seasoning. I let it cook covered under the rice is almost done & then I add in a cup of cheese. Once its finished cooking hubbs tops it with lettuce, more cheese & hot sauce. MMM MMM...

Rated 5 out of 5 by from I made a few small changes, used one pound turkey instead of hamburger. I made a few small changes, used one pound turkey instead of hamburger. I added a can of rinsed, black bleans, a can of mexicorn (undrained) and a can of rotel lime/cilantro tomatoes (undrained) which gave it an extra kick of flavor. Did not have lettuce in house, but i would have done a salad on the side. Can see where this would be a great base for stuffed green peppers, tacos, buritos, nachos, etc. Quick and easy, will make this again.

This recipe was good but it was bland....I did not have a tomato to top it with but did add sour cream and taco sauce and it still seemed like it was missing something. You also could not taste the taco seasoning. Instead of using a fork, I used nacho chips like it suggested. My boyfriend thinks 3 stars is being too nice since he loaded it up with taco sauce and still did not like it.

Rated 4 out of 5 by from I have made this recipe several times. I have made this recipe several times. It is a quick easy meal when you are in a hurry. I make it with ground turkey instead of ground beef. I add chopped onion to the ground turkey and use instant brown rice. I add black beans, a small can of diced tomatoes with chilies and instead of chopping lettuce on top, I put fresh spinach in the rice mixture to wilt. Delicious!

This is a very quick dish to make and very easy.I usually use ground beef,but, tonight I only had boneless skinless chicken breasts and decided to use them. I also add an onion when I brown the meat.After I add the taco seasoning I also add about a cup of salsa for extra flavor. Sometimes I will add black beans and corn.

I added a little bit of salsa and velveeta to the meat mixture as it was cooking. I also tore up some tortillas and mixed it in with the meat then put the cheese on top. I will definitely make this again!

It's quick, easy and very versatile. We add hot sauce, sometimes a can of mexicorn.. serve in tortillas or taco shells.. or on chips for nachos. You can do anything to change it up! Very tasty!
