  • Mix dressing and curry powder; pour over chicken. Cover and refrigerate 10 minutes.
  • Pour chicken mixture into large skillet. Add celery, carrots and onions; mix well. Cook on medium-high heat 2 minutes, stirring occasionally. Stir in chicken broth. Bring to boil. Cover skillet. Reduce heat to medium-low; simmer 5 minutes.
  • Add rice, apricots, cashews and ginger; mix well. Remove from heat. Let stand, covered, 5 minutes. Stir before serving.

Substitute

Try using fresh chopped ginger in place of the powdered ginger. Or, add some heat to the dish by adding a dash of dried red chilies.

I LOVED it but my husband didn't. The flavors were all great together and it definitely had enough flavor for me. I just sprinkled a little extra curry on it and stirred after it was cooked. Not sure if that made a huge difference but the flavor was great and definitely a change from the usual. I did have to add water and allow the rice to cook longer than 5 minutes. I used minute brown rice instead and it was delicious.

Spicy and not lose the original flavour of the ingredients.I used boneless chicken thigh for this recipe.You can also use chicken middle wings for this dish.We normally use Thai Fragrant Rice for our daily consumption as they are firm in texture and aromatic. Best for curried dish. Poh Chuu from Singapore.

I was disappointed with the lack of flavor. I think I will try it 1 more time with more spices. It is easy to make, and the nuts add a good crunch.

Rated 4 out of 5 by from We really enjoyed this recipe. We really enjoyed this recipe. I used coconut milk instead of the Catalina dressing. Also added green peppers for more vegetables and only used 1 Tbsp of curry powder. Will make this recipe again.
