  • Zest the orange; reserve zest for later use. Cut white membrane off orange; discard. Cut fruit into sections, then cut each section in half.
  • Beat cream cheese, ricotta, sugar and vanilla in large bowl with mixer until blended. Add chocolate and reserved orange zest; mix well. Gently stir in 2 cups COOL WHIP.
  • Spread 2 cups cream cheese mixture onto bottom of 13x9-inch pan. Top with layers of 30 wafers and half the remaining cream cheese mixture; repeat layers. Cover with remaining COOL WHIP.
  • Refrigerate 4 hours. Top with orange sections and remaining wafers just before serving.

Special Extra

Garnish with chocolate curls just before serving. Melt 1 pkg. (4 oz.) BAKER’S Semi-Sweet or White Chocolate, or 1 pkg. (4 oz.) BAKER’S GERMAN’S Sweet Chocolate, as directed on package. Spread with spatula into very thin layer on baking sheet. Refrigerate 10 min. or until firm, but still pliable. To make curls, push a metal spatula firmly along the baking sheet, under the chocolate, so the chocolate curls as it is pushed. (If chocolate is too firm to curl, let stand a few minutes at room temperature; refrigerate again if it becomes too soft.) Use a toothpick to carefully place chocolate curl on a waxed paper-covered tray. Refrigerate 15 min. or until firm. Use toothpick to arrange curls on dessert. Store any remaining curls in airtight container in freezer for up to 6 months.

It was very easy to make it takes a bit of time and that is really the layering of all the ingredients. I tasted this and it was yummy! I did not have semi-sweet chocolate bar handy so i chopped up by hand semi-sweet chocoalte chips. I used part-skim ricotta cheese and fat free cream cheese and lite frozen whipped topping to make it a bit better on the figure...lol! I would and will make this again...it was worth the time to put this together,and it was easy also everyone loved it. I love italian food it is my FAVE and I love canolis too this is a keeper!!!

I made this with the reduced fat cream cheese, lite cool whip and reduced fat wafers and don't think that it tastes anything like the cannolis that we've had from local Italian bakeries. My husband took one bite and wouldn't eat any more. Maybe if the grated orange rind had been left out it would taste more like a cannoli but don't think that I'll make it again to see.

I not only used the PHILADELPHIA Neufchatel Cheese (1/3 Less Fat) I also used reduced fat Nilla wafers, and Splenda in place of the sugar. I also chose to use the Cool Whip Free. I didn't think one 8oz. tub of Coll Whip was enough, I used almost two tubs.

This is probably the best refrigerator cake recipe I've found and it truly does taste like a cannoli. I used mini semi-sweet morsels instead of chopped baking chocolate because I had them in the pantry. The cake was a hit with children and adults.

I used reduced fat ricotta & Nilla wafers, and fat free cream cheese to fit this dessert into my diet, and it turned out really well. I also drizzled Kahlua over the wafers so they would be softer. Fabulous!

Rated 5 out of 5 by from This was delicious and enjoyed by many picky eaters. This was delicious and enjoyed by many picky eaters. I substituted grahams in the base because I was low in nilla wafers and was still great. Fresh orange peel is better than the stuff in a jar.
