I use the large hole side of my grater to shred the jicama, then squeeze out most of the liquid with a clean dishcloth. MUCH easier than trying to cut "matchstick" strips.
Great summer salad. The Jicama adds such a nice sweet crunch. Very easy and very tasty! Will be making again.
I love the combination of the oranges and jicama but i would suggest a lemon and honey mixture for the dressing instead of the current dressing
