  • Preheat oven to 400°F. Mix flour, drink mix, sugar, baking powder, baking soda and salt in large bowl; set aside. Beat egg, milk and oil in small bowl with wire whisk until well blended. Add to flour mixture; stir just until moistened. (Batter will still be lumpy.)
  • Spoon evenly into 12 greased (2-1/2-inch) muffin cups, filling each cup two-thirds full.
  • Bake 15 min. or until wooden toothpick inserted in centers comes out clean.

Storage Know-How

To freeze, wrap completely cooled muffins in foil and place in freezer-weight resealable plastic bag. Remove from bag when ready to serve. Reheat foil-wrapped muffins at 350°F for 15 to 20 min. or just until warmed.

I even chopped a cup of dried cranberries and a half a cup of pecans in a food processor and added them to the batter. It made them even better! It made 36 mini muffins.
