  • Heat grill to medium heat.
  • Mix turkey and 2 Tbsp. mayonnaise just until blended; shape into 4 (1/2-inch-thick patties).
  • Grill 4 to 5 min. on each side or until burgers are done (165ºF), topping with cheese for the last 2 min.
  • Spread cut sides of rolls with remaining mayonnaise.
  • Place apples on bottom halves of rolls; top with burgers, arugula, shallots and mustard. Cover with tops of rolls.
