  • Heat oven to 350°F.
  • Mix sugar, butter, eggs and vanilla in large bowl until well blended. Add flour, baking powder and salt; mix well. Stir in chopped cookies. Divide dough in half. Use floured hands to shape each half into 9x3-inch loaf on baking sheet sprayed with cooking spray.
  • Bake 25 to 30 min. or until golden brown and toothpick inserted in centers comes out clean. Cool 10 min. Cut each loaf diagonally into 16 (1/2-inch-thick) slices. Place slices, cut sides up, on same baking sheet. Bake 10 to 12 min. on each side or until lightly toasted on both sides. Remove to wire racks; cool completely.
  • Drizzle cooled biscotti with melted chocolate.

Rated 5 out of 5 by from This is by far my favorite biscotti recipe. This is by far my favorite biscotti recipe. I make them all the time. They have been a huge hit at church bake sales and I have been asked by so many people for this recipe! Also, the girls at work are always bugging me to bring them in. If you aren't a "dunker", don't bake them as long so you can eat them more like a cookie. Absolutely LOVE them!!!

It was such a hit I made more batches for gifts and to take to the extended family gathering on Christmas. Not only is this version of biscotti good in coffee, but it is yummy dunked in milk too.

These were pretty good by our guests comments.But I had made the unfortunate mistake in using a store brand cookie...bad idea.Next time I plan on using the real thing and maybe pecans or walnuts.They took time,but really well worth the effort!Not that hard.

I make this recipe, along with 4 others, to serve as a Christmas gift to my co-workers. (About 80 people). Several people, who don't like nuts, love this version of biscotti and request it every year. It turns out great every time I make it.

Everyone at work loves this recipe. I usually place it in little plastic bags and put a ribbon on it and give it as gives. This recipe is awesome.

I have made this recipe a few times now and people think that its so hard to make, I guess I kinda giggle a bit inside. These are so easy to make and yummy, I put them in baskets and wrap them up for house warming gifts.

My family loves these -- and the kids in my daughter's dorm at college gobble these up faster than I can send them!!
